We proudly work with Lorentz Meats of Cannon Falls, Minnesota. When you enter Lorentz Meats, you are greeted by a quote from Wendell Berry:

"We cannot live harmlessly at our own expense; we depend on other creatures and survive by their deaths. To live, we must daily break the body and shed the blood of Creation. The point is, when we do this knowingly, lovingly, skillfully, reverently, it is a sacrament; when we do it ignorantly, greedily, clumsily, destructively, it is a desecration."

This quote is a good indication of the high standards Lorentz Meats holds themselves to. They are an abbatoir committed to quality, and in accordance with this they have also committed themselves to transparency. Their processing facility was designed with advice from Temple Grandin. On any day of the week you are able to visit their facility and observe through large plate glass windows the animals being processed. This is unusual in the industry and in 2006 Lorentz Meats was lauded by Michael Pollan in his New York Times bestseller - The Omnivore's Dilemma - for this practice.

The reason we feel strongly about having Lorentz Meats and their commitments to quality and transparency behind our processing reflects our desire to have you know more about your food and how it gets to your table. The more you understand about where it's from, where it goes and how it gets to you the more informed you can be in making decisions that affect the world as a whole.
